What is Organic?

The organic product is a guaranteed product because it is certified according to EEC regulation 2092/91 which ensures its production method. Products that come from organic farming are obtained without any synthetic chemical substances and in full respect of the environment. To adhere to these objectives, organic farming has adopted techniques that respect natural ecological balances: the defense against harmful insects is carried out by using beneficial insects, the use of substances of mineral, vegetable, animal origin and resistant plants; soil fertility is maintained and enhanced with natural fertilizers and agronomic practices such as green manure; weed control is carried out without any pesticides, using mechanical, agronomic and physical techniques. The main objective of these practices is the production of food, whether of plant or animal origin, free of toxic residues and intact in their nutritional value. The organic product guarantees quality and genuineness, essential prerogatives to nourish in a balanced, complete and healthy way.

What is khorasan (Kamut)?

Kamut is a variety of durum wheat widespread in ancient Egypt. A Kamut biscuit, although richer in protein than durum wheat, has good tolerability in cases of wheat allergy or intolerance. It has a high selenium content (which varies depending on the soil in which it is grown) which, combined with vitamins E (abundant in wheat), A and C, inhibits the formation of free radicals, which are partly responsible for the onset of many degenerative diseases. Given the high protein content and the good quality of its gluten, it is suitable both for the preparation of pasta, as well as baked goods such as biscuits, bread, etc.

What is Farro?

Spelt is a little-cultivated variety of wheat. Spelt flour formed the basis of the diet of Latin populations. After the cultivation of other varieties of cereals, the cultivation of spelt has decreased over time, almost to the point of disappearing. Today, rediscovered thanks to its excellent dietary properties, it is cultivated in Italy and considered almost niche, finding its natural place in organic farms.

What are Chia Seeds?

Chia seeds are rich in proteins, Omega-3, fiber, and antioxidant molecules, chia seeds are the perfect ally for staying healthy and also help us in the fight against diabetes, cardiovascular diseases, and cancer! Chia seeds are small, flat, and oval seeds extremely rich in properties. They are generally gray-black in color and are the seeds of Salvia Hispanica, an extremely common flowering plant in Central and South America, especially in Mexico and Guatemala, where they were the staple food of ancient populations such as the Aztecs and Maya. Their peculiarity? They are extremely rich in fiber, “good” Omega-3 fatty acids, proteins, and also have good levels of minerals such as phosphorus and calcium and antioxidant molecules.

What are Probiotics?

L'Antica Forneria Preziuso has started, together with the University of Camerino, the experimentation of Probiotics in biscuit making. Probiotics are “organisms" that, when administered in the right amounts, provide significant benefits to those who take them. What are they? Probiotics are live microorganisms that positively influence our health by improving the balance of intestinal microflora. How do they work? Beneficial bacteria work in various ways: they break down indigestible foods; produce important nutrients such as vitamin K (menadione); counteract the growth of pathogenic bacteria through competition for food or living space, or through the production of acids or antimicrobial substances; stimulate the immune system.
